  • 2 lbs beef chuck (cubed)

  • 3 cups beef broth

  • 2 tbsp tomato paste

  • 1 onion (chopped)

  • 3 potatoes (cubed)

  • 2 celery stalks (chopped)

  • 2 cloves garlic (minced)

  • 1 tsp thyme

  • 1 bay leaf

  • Salt & pepper to taste

Instructions

  1. Heat a heavy-bottomed pot or Dutch oven on medium-high. Sear beef cubes until browned.

  2. Add onions and garlic, sauté until fragrant.

  3. Stir in tomato paste, then pour in broth.

  4. Add bay leaf, thyme, salt, and pepper. Cover and simmer on the stovetop for 1.5 hours.

  5. Add carrots, potatoes, and celery, cook for another 30 minutes.

  6. Remove bay leaf and serve warm!

2. Tuscan Stovetop Chicken Stew 

For those who love Italian flavors, this Tuscan-style chicken stew will make your stovetop the heart of your home.

Ingredients

  • 4 boneless chicken thighs (cubed)

  • 3 cups chicken broth

  • 1 can diced tomatoes

  • 1 can white beans (drained)

  • 1 onion (chopped)

  • 1 handful kale (chopped)

Instructions

  3. Pour in broth and diced tomatoes, then stir in beans, rosemary, oregano, salt, and pepper.

  4. Cover and let simmer for 40 minutes.

3. Cajun Stovetop Sausage & Shrimp Stew

Ingredients

4. Moroccan Chickpea Stovetop Stew

Ingredients

  • 1 can chickpeas (drained)

  • 3 cups vegetable broth

  • 1 cup lentils

  • 3 cups vegetable broth

  • 1 tsp thyme
